Step 1: Prepare Ingredients
Precision is essential when making macarons, so begin by weighing all ingredients using a kitchen scale. Sift the almond flour and powdered sugar together into a bowl. This ensures a smooth batter and prevents lumps in the shells. If your almond flour is coarse, pulse it briefly in a food processor before sifting.
Separate the egg whites carefully and allow them to come to room temperature. Some bakers age their egg whites (leaving them in the fridge for 24 hours, then bringing to room temp), which can help achieve better structure, but it’s optional.
Step 2: Make the Sugar Syrup
In a small saucepan, combine the granulated sugar and water. Heat over medium heat without stirring, allowing the sugar to dissolve and form a syrup. Use a candy thermometer to monitor the temperature. You are aiming for 118°C (244°F), which is known as the soft-ball stage.
While the syrup heats, begin whipping one portion (35g) of the egg whites in a clean, grease-free bowl. Whip until they reach soft peaks.
Step 3: Italian Meringue
Once the sugar syrup reaches 118°C, slowly pour it into the whipping egg whites while continuing to mix at medium speed. Be careful to pour along the side of the bowl to avoid splattering.
Increase the mixer speed and whip until the meringue becomes glossy, thick, and cool to the touch. This is called Italian meringue and is more stable than French meringue, making it ideal for macarons.
Step 4: Make the Almond Paste
In a separate bowl, mix the remaining 35g of egg whites with the almond flour and powdered sugar mixture. Stir until it forms a thick, paste-like consistency. Add food colouring at this stage if desired.
Step 5: Macaronage (Mixing the Batter)
This is the most crucial step. Add about one-third of the meringue into the almond paste and mix to loosen it. Then fold in the remaining meringue gently using a spatula.
The goal is to achieve a batter that flows like lava. When you lift the spatula, the batter should fall in a ribbon and slowly blend back into itself within about 10 seconds. Avoid undermixing (which leads to lumpy shells) or overmixing (which results in flat macarons).
Step 6: Piping the Macarons
Transfer the batter into a piping bag fitted with a round tip. Pipe small, even circles (about 3–4 cm in diameter) onto a baking tray lined with parchment paper or a silicone mat.
Hold the piping bag vertically and apply even pressure. Once piped, tap the baking tray firmly on the counter several times to release air bubbles. Use a toothpick to pop any visible bubbles on the surface.
Step 7: Resting the Shells
Let the piped macarons rest at room temperature for 30–60 minutes, or until a dry skin forms on the surface. You should be able to lightly touch them without batter sticking to your finger.
This resting step is essential for developing the signature “feet” (the ruffled base) during baking.
Step 8: Baking
Preheat your oven to 150°C (300°F). Bake the macarons for 12–15 minutes. The exact time may vary depending on your oven, so it may take some experimentation.
To test doneness, gently touch the top of a shell — if it doesn’t wobble, it’s ready. Allow the macarons to cool completely before removing them from the tray.
Step 9: Prepare the Filling
While the shells cool, make the buttercream. Beat the softened butter until creamy. Gradually add powdered sugar, mixing well. Add milk or cream a little at a time until you reach a smooth, spreadable consistency. Mix in vanilla extract or any flavouring you prefer.
You can also experiment with fillings such as chocolate ganache, fruit jams, or flavoured creams.
Step 10: Assemble the Macarons
Match the macaron shells in pairs of similar size. Pipe a small amount of filling onto one shell, then gently press the other shell on top to create a sandwich.
Avoid overfilling, as the filling can spill out when pressed.
Step 11: Maturing the Macarons
Although it’s tempting to eat them immediately, macarons are best after “maturing.” Place them in an airtight container and refrigerate for 24 hours. This allows the filling to soften the shells slightly, creating the perfect texture.
