Scrolling through Instagram, I happened upon a recipe for “Garbanzos con zamburiñas”. My Spanish is passable, and I recognise a chickpea when I see one. But zamburiñas? Under normal circumstances, it being Instagram, I would scroll on, despite the smiling chef moaning with pleasure, were it not for his sudden outburst.

“¡Bestial!”

Generally translated as ‘incredible, awesome, amazing’, I saw the beast. I felt the beast. I tasted it. Now I needed to know more.

Zamburiñas are small shellfish, very similar to scallops. They are often canned and served in a vieira sauce, typically made with: onion and garlic, olive oil, tomato, and paprika. As this recipe proved, they pair very well with chickpeas, accompanied by a tangy vinaigrette, crispy raw celery, and fresh avocado. Bestial, indeed.

Amazing how one word can open up a whole new world and push us into action.

I love words. I am addicted to their sound, their meaning and etymology, their endlessness. Words have great power beyond the meaning they convey. They reverberate, burst open into images and connotations. Timeless, they change over time and change the world they describe and help create.

Words hurt and soothe. Words build bridges, bring people together, tear them apart. Words name things into existence.

Words deserve to be handled with care.
