Beyond Heavy Masalas: Letting Fish Taste Like Fish

A simple fish fry experiment that changed my perspective.

Fish is one of those foods where every variety has its own unique taste and flavor. But somewhere along the way, many recipes started covering that natural taste with too much masala and heavy marination.

Recently, I experimented with a very simple fish fry recipe at home.

Instead of using many spices, I kept the marination minimal:

  • salt,
  • turmeric powder,
  • lemon,
  • and just a small pinch of garam masala.

That’s it.

We made the fish and shared some pieces with our neighbors for feedback.

To our surprise, their 5-year-old daughter almost finished all the pieces herself.

What surprised us even more was what her parents said afterward.

They told us:

“She usually does not like outside fish fry because there is too much masala and spice coating. We often have to remove the outer layer before giving it to her.”

That moment stayed with me.

It made me realize something important:

Fish already has its own beautiful flavor. Unlike many other meats, each fish tastes different naturally. Sometimes we do not need to overpower it with too many spices. A light marination can actually help the original taste shine better.

My Quick Fish Fry Method During Busy Office Days

This is the method I now use regularly, especially on busy workdays.

For around 200 grams of fish, I use:

  • a pinch of salt,
  • 1 teaspoon turmeric powder,
  • juice of half a lemon,
  • and 1 teaspoon garam masala.

I mix everything gently and let the fish rest for around 30 minutes while I continue my office work.

After that:

  • I brush about 1 teaspoon oil lightly on both sides of the fish.
  • Then I place it in the air fryer.
  • Cook at 180°C for 7 minutes.
  • Flip the fish.
  • Again cook at 180°C for another 7 minutes.

That’s all. The smell, texture, and taste turn out amazing almost every time.

Why I Prefer This Method

1. Less Oil, Less Calories

Compared to pan frying, this uses very little oil.

2. Saves Time

No standing near the stove continuously.

3. Fish Smell Reduces Significantly

Air frying with minimal spices surprisingly reduces the strong fish smell inside the house.

4. Natural Taste Stays Intact

This is probably the biggest advantage. You actually get to enjoy the original flavor of the fish instead of tasting only masala.

One Extra Tip for People Sensitive to Fish Smell

If someone still feels the smell is strong, this method helps:

  • wash the fish gently with salt, lemon, and turmeric first,
  • then apply the marination again before cooking.

This can help reduce the smell further without affecting the taste too much.

Sometimes simple cooking methods create the best food experiences. And sometimes, fish tastes best when we simply let it taste like fish.
