A Luxurious, Deeply Savory Vegetarian Hotpot Base
To make a vegetarian version that rivals the meat-based stock, we lean heavily into Forest Umami. Since we lose the traditional scallops and bone broth, we utilize a potent combination of dried fungi, seaweed, and select aromatics to engineer a broth so deep, complex, and savory that even meat-eaters won’t miss the beef. INGREDIENTS
- The “Umami Bomb” Stock
- 1.5 Liters Water
- 6–8 pieces Large Dried Shiitake Mushrooms
- 1 large piece Kombu (Dried Kelp)
- 1 tbsp Nutritional Yeast (The secret for a “meaty” depth) (Optional)
- 1 pinch Saffron strands (Optional)
- The Aromatic Ruby Base
- 3 tbsp Refined Coconut Oil or Sunflower Oil (high-heat stable)
- 1 tbsp Toasted Sesame Oil
- 3–4 tbsp Youki Gluten-Free Toban Djan
- 2 tbsp Fresh Ginger (grated)
- 4 cloves Garlic (minced)
- 1 large Leek (whole, chunked) or 2 Spring onions (whole)
- 2 Carrots, chunked
- 200g chunked daikon
- Whole Spices:
- 2 Star Anise,
- 1 small Cinnamon stick,
- 1 tsp Fennel seeds,
- 2 Bay leaves,
- 1 piece Dried Citrus peel,
- 1 Black Cardamom pod
- The “Liquid Silk” Emulsion
- 4 tbsp Pure Toasted Sesame Paste (Japanese Nerigoma)
- 2 tbsp Red Miso (Provides a deep, fermented funk to replace meat complexity)
- 1 tbsp Tamari (Gluten-Free)
- 250 ml Full-fat Cashew Milk or Oat Milk (Ensure it is a “Barista” or extra-creamy version) (optional)
PREPARATION INSTRUCTIONS
Phase 1: The Cold-Steep Dashi
- Place the Dried Shiitakes and Kombu in a pot with 1.5L of cold water.
- Bring the liquid to a very gentle simmer. Avoid a hard boil, as boiling causes the Kombu to release bitter flavors and become slimy. After 10 minutes of gentle simmering, carefully lift out and discard the Kombu.
- Continue to simmer the shiitake mushrooms for an additional 15 minutes to fully extract their essence.
- The “Scallop” Trick: Remove the mushrooms from the stock, squeeze their remaining juices back into the pot, and slice the caps into very thin, matchstick slivers. These will serve as your “vegetarian scallops,” remaining in the broth to provide texturally rich bites.
Phase 2: The Ruby Infusion
- In your primary hotpot vessel, heat the coconut oil and toasted sesame oil over medium heat.
- Incorporate the whole spices: Star Anise, Cinnamon stick, Fennel seeds, Bay leaves, Citrus peel, and the Black Cardamom pod. Fry gently until intensely aromatic (enough to smell them from the next room).
- Add the leeks/spring oinion, grated ginger, minced garlic, carrots and daikon. Sauté steadily until softened and translucent (5 minutes).
- Add the Youki Toban Djan. Fry it directly in the spiced oil for 2–3 minutes, stirring constantly, until the oil shifts to a dark, shimmering crimson and the raw fermented aroma transforms into something rich and sweet.
Phase 3: Building the Depth
- Whisk the sesame paste, red miso, and tamari directly into the aromatic mixture to form a thick, uniform paste.
- Slowly pour in your warm Shiitake/Kombu stock while whisking continuously, then stir in the nutritional yeast.
- Return the slivered shiitake mushrooms to the vessel and add the saffron strands. Let the broth simmer gently for 30 minutes to an hour, allowing the saffron to bloom and dye the broth a stunning sunset orange.
- Strain out any non edible spices and large vegitables used to created stock base.
Phase 4: The Silk Finish
- Just prior to gathering around the table, lower the heat and stir in the creamy cashew or oat milk. The broth will instantly emulsify, transforming into an opaque, golden-red “latte” of complex spice and deep umami.
PREMIUM VEGETARIAN INGREDIENTS TO ACCOMPANY
- Frozen Tofu: Freezing changes tofu’s cellular structure into a porous honeycomb texture. Once thawed and pressed, it acts like a sponge, soaking up this luxurious broth better than any other ingredient.
- Lotus Root: Sliced thin, these reveal a geometric pattern reminiscent of Victorian lace, providing an excellent aesthetic touch and a crisp bite.
