5-Minute Peanut Chili Noodles
I went international grocery shopping today and found myself standing in front of the wall of rice noodles, trying to decide which ones to grab.
While picking out the wide, flat rice noodle packages, someone asked why I chose those particular ones.
The answer is simple.
Sometimes it is difficult to meal plan and maintain a balanced diet when you are constantly on the move. Not every meal needs to be a three hour production involving seventeen ingredients and a personal life coach. Sometimes you need something quick, filling, and versatile enough to work with whatever protein happens to be in the refrigerator.
Wide rice noodles are one of those staples.
They cook quickly, hold sauce well, and can become anything from a drunken noodle to a peanut chili noodle with very little effort. For me, this dish falls somewhere between the two. Fast, flavorful, and forgiving enough that you can adjust it to fit almost anyone’s palate.
For after Friday golf, I was asked to make this dish and walk everyone through the process, so here it is.
People ask me for recipes all the time, but I rarely write them down in full. Most of my notes look more like ratios than recipes; 1:1, 2:1, adjust here, add there. Years of cooking, from commercial test kitchens to feeding large families, eventually teach you that recipes are less about exact measurements and more about understanding balance.
Salt, acid, fat, heat, sweetness.
Once you understand those relationships, you can build almost anything.
This is one of those dishes.

5-Minute Peanut Chili Noodles
Serve with chicken, shrimp, tofu, or enjoy as is.
Ingredients
- 9 oz (250 g) hand-cut thick noodles, or your preferred noodle
- 1½ tbsp peanut butter
- 1 tsp chili flakes, optional
- ⅓ cup green onion, sliced
- 2 tsp sesame seeds
- 5 garlic cloves, minced
- 1 tbsp white sugar, optional, to balance the heat
- 1 tbsp chili crisp
- 2 additional tbsp chili crisp for garnish
- 1 tbsp rice vinegar
- 2 tbsp dark soy sauce
- ¼ cup neutral oil, I use avocado oil
- 2 to 3 tbsp reserved noodle water, optional
- Additional green onion for garnish
- Fresh lime wedges for garnish
Instructions
1. Cook the noodles
Bring a pot of salted water to a boil and cook the noodles according to package directions. Undercook them by about 30 seconds since they will finish in the sauce.
Reserve some noodle water before draining.
Rinse the noodles under cold water to keep them from sticking together like that one friend who still texts their ex.
2. Build the sauce
In a cold pan, combine the peanut butter, chili flakes, green onion, sesame seeds, garlic, sugar, chili crisp, rice vinegar, and dark soy sauce.
Leave the heat off for now.
3. Wake everything up
Heat the oil until very hot.
Carefully pour the hot oil over the sauce ingredients. Everything should immediately sizzle and bloom.
Stir until fully combined.
4. Add the noodles
Toss the noodles into the sauce and coat thoroughly.
For a silkier texture, place the pan over medium-low heat and add 2 to 3 tablespoons of reserved noodle water. Mix until the sauce evenly coats the noodles.
5. Finish
Remove from heat.
Top with additional green onion, extra chili crisp, and fresh lime wedges.
Serve immediately.
Why This Works
This recipe takes about five minutes of actual cooking time, scales easily for a group, and provides a solid base for added protein and vegetables.
The peanut butter provides richness, the vinegar adds brightness, the chili crisp brings heat, and the wide rice noodles carry everything without becoming mushy.
Simple food does not have to be boring food.
Sometimes the best meals come from keeping a few versatile ingredients on hand, then throwing together something quick after a long day, a round of golf, or whatever fresh chaos life decided to schedule on your calendar.
Like most of my cooking, this recipe is less about following directions and more about understanding the ratios. Once you know the foundation, the rest becomes personal preference.
