Ingredients

  • 500 grams basmati rice
  • 500 grams chicken
  • 2 onions (thin sliced)
  • 2 tomatoes (chopped)
  • 2 green chilies
  • 1 tablespoon ginger garlic paste
  • 1 cup curd
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons ( biryani masala )
  • Mint leaves
  • Coriander leaves
  • 3 tablespoons oil
  • 2 tablespoons ghee
  • Salt as needed
  • Whole spices (cloves, cinnamon, cardamom, bay leaf)

Step 1: Marinate the Chicken Take chicken in a bowl. Add curd, ginger garlic paste, chili powder, turmeric powder, biryani masala, and salt. Mix well and keep it aside for at least 30 minutes.

Step 2: Cook the Rice Boil water in a large vessel. Add whole spices and salt. Add basmati rice and cook until 70% done. Drain the water and keep the rice aside.

Step 3: Prepare the Masala Heat oil and ghee in a heavy pot. Fry sliced onions until golden brown. Add green chilies and tomatoes. Cook until soft and oily.

Step 4: Cook the Chicken Add the marinated chicken into the pot. Cook for few minutes until the chicken starts absorbing the masala flavors.

Step 5: Layer the Biryani Spread half of the cooked rice over the chicken. Add mint leaves, coriander leaves, and fried onions. Repeat the layers with remaining rice.

Step 6: Dum Cooking Close the pot tightly with a lid. Cook on low flame for 20–25 minutes. This slow cooking helps all flavors mix perfectly.

Step 7: Final Touch Open the lid carefully. Mix the biryani gently without breaking the rice. Serve hot and fresh.
