A bacterium inside a four-dollar wedge runs the same chemistry as one inside a forty-dollar wheel. Cottage cheese: the moment frozen
Most cheeses spend months letting the rot get to work. Over months, enzymes break the cheese’s proteins into individual amino acids, and one of them, tyrosine, gets concentrated enough to crystallize. You’re biting into crystals built atom by atom out of decomposed protein, alongside the free glutamate that gives aged cheese its savory, mouth-filling intensity. In a cooked dish, the cheap wheel’s output is nearly identical to the famous name — you’re mostly paying for a specific region and a longer minimum age.
Cheap blue cheese: the honest one
Blue cheese doesn’t hide what it is. Processed cheese: engineered, not fake
Put the pitchforks down. Processed cheese starts as real cheese, then makers add emulsifying salts and re-melt it. Those salts solve the problem that ruins amateur cooks daily: real cheese breaks when heated, its proteins clenching and squeezing out fat and water into a greasy mess. The salts hold the proteins relaxed and evenly spread, so it melts into a flawless, glossy sauce that never splits.
