Nihari is a traditional dish of Pakistan, boasting richly flavored broth with pieces of tender meat. Dating back to the Mughal era, it has evolved to become the most favorite dish in every subcontinent region. This name "Nihari" has come from Arabic, which says "Nahar" meaning day, because historically, this was a night-cooked dish served for breakfast next morning. This dish is always served with naan or steamed rice and, therefore is perfect for any special occasion or family gathering. And here's how you make this comforting, hearty stew.

Ingredients:

For the Meat and Broth:

1 kg beef shank or mutton (bone-in pieces work best for flavor)

3-4 tablespoons ghee or oil

1 large onion, finely sliced

2 tomatoes, chopped

2 teaspoons ginger-garlic paste

1-2 green chilies, slit

5-6 cups water (adjust depending on desired consistency)

Salt, to taste

Spices:

1 tablespoon Nihari masala (available in stores or homemade–see below) 1 teaspoon Turmeric powder 1 teaspoon Red chili powder 1 teaspoon Coriander powder 1 teaspoon Cumin powder 1/2 teaspoon Garam masala 2-3 cloves 2-3 cardamom pods 1-inch cinnamon 1 bay leaf . For the Nihari Masala, if to be prepared at home. 1 tablespoon Fennel seeds 1 teaspoon Cumin seeds 1 teaspoon coriander seeds 1/2 teaspoon Black peppercorns 2-3 dried red chilies 1-inch cinnamon stick 2-3 Green cardamom pods . Garnishes : Fresh coriander leaves, chopped Fried onions . Lemons wedges

Green chilies, slivers Ginger slivers

Instructions

Step 1: Nihari Masala

In case you are making the Nihari masala at home, then roast the fennel, cumin, coriander seeds, black pepper, red chilies, cinnamon, cloves, and cardamom pods in a pan for 2-3 minutes or when they give a fragrant aroma. Let the mixture cool down and then make a fine powder by crushing it in a spice grinder or mortar and pestle. Keep it aside.

Step 2: Meat Preparation

  1. Put ghee or oil in a large pot and set the heat to medium.

  2. Add sliced onions and sauté them until they turn golden brown.

3. Add the ginger-garlic paste and green chilies and sauté for another 2-3 minutes till fragrant.

4. Add chopped tomatoes, cook until they soften.

5. Add the fresh spices (cloves, cinnamon stick, cardamom pods, and bay leaf), followed by the homemade or store-bought Nihari masala, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Let the mixture cook for a couple of minutes until the spices release their oils.

6. Add the beef or mutton pieces in the pot and let them brown for 5-7 minutes.

Step 3: Simmering the Stew

  1. Pour in the water (around 5-6 cups based on how you prefer it-thick or thin gravy), and boil.

  2. Reduce the heat, allowing it to simmer for about 2.5 to 3 hours, giving the meat time to get tender, and then it will bring out more flavor.

  3. At times, skim off scum that floats up on the broth to have it clear.

Step 4: Final Touches

  1. After the meat is tender, check the seasoning and adjust salt or spices as needed.

  2. To thicken the gravy, you can mix 2 tablespoons of wheat flour with a bit of water to form a smooth paste and stir it into the stew. Cook for another 10 minutes to achieve the desired consistency.

Step 5: Serving

Serve it hot into serving bowls, garnishing it with some freshly chopped coriander, fried onions, green chilies, ginger slices, and a squeeze of lemon juice.

Tips for Perfect Nihari

1. Bone-in beef or mutton is preferably used in this recipe, as the marrow adds some depth to the broth.

2. Slow Cooking: The only way a delicious Nihari can be prepared is through slow cooking on low heat. This is the only way to allow spices to mingle with the meat and create that deep, savory taste.

3. Nihari Masala: Store-bought Nihari masala is easy to get; however, homemade masala is better in terms of flavor.

: You can control the heat by the number of green chilies or red chili powder you use.

Serving Suggestions:

Traditionally, nihari is served with naan or paratha, allowing the flavors of the rich gravy to soak into the soft bread. For a more hearty meal, serve it steamed rice. A dollop of fresh yogurt on the side provides a creamy contrast for added depth of flavor.

Conclusion:

Nihari is a warming, comforting dish that embodies the rich culinary history of South Asia. Whether served for breakfast or dinner, it’s sure to impress with its aromatic spices and tender meat. Make this delicious stew for a family gathering, and you’ll enjoy a taste of tradition with every bite!
