Distilling Is Thinking

The still does not destroy the agave. It reveals it.

The master mezcal maker cooks the agave, crushes it, ferments it, heats it. What rises through the still is the essence. What remains is the bagazo: the context, the memory of the origin.

That is distilling: extracting the essential without losing the context that makes it possible.

Edgar Morin spent decades denouncing that modern thought cuts reality into pieces and then cannot reassemble it. He called it simplifying thought. His solution was complex thought: look at the whole, the relationships, the context. A beautiful desire. Without method.

Morin assumed that defining is separating. That naming with precision is amputating. He never examined that premise. He wanted complexity without the act of defining. He wanted the perfume without the still.

The tool already existed. In Aristotle: proximate genus and specific difference.

To define is to point to two things: the field from which something emerges (the context) and what distinguishes it from everything else within that field (its singularity). You cannot define without naming the context. Definition demands it.

The thought that Morin criticizes does not define. It labels. It classifies in order to administer. It confuses the map with the territory. Morin fired at reductionism. The bullet also grazed Aristotle, who did not deserve that scrape.

Sweat is not a product the body manufactures and delivers. It is the body happening. You cannot separate sweat from the one who sweats without destroying what you were looking for. Essence does not exist before the process. It is the process reaching maturity.

Whoever understands this can approach anything complex — a person, a culture, a memory — and distinguish its layers without breaking them. See at the same time where it comes from, what it is now, and what it coexists with in order to remain what it is.

The Denomination of Origin for mezcal does exactly this: it points to the soil, the climate, the hands, the time. Remove any of those elements and you have an agave distillate. You do not have mezcal. To define is not to label. It is to recognize that essence does not exist separate from the distillery that produces it.

Distillation has its shadow. When it becomes mechanical — routine, protocol, formula without awareness — it becomes what Morin denounced. And when it is abandoned halfway — naming the proximate genus and stopping there, without reaching the specific difference — it becomes classification without understanding.

The still does not decide what mezcal is. It makes it possible for the agave to become what it always was. A consciousness that distills well does not decide what reality is. It makes it possible for reality to reveal itself in its own layers.

For this, no new paradigms are needed. What is needed is patience to wait for the process to mature, precision to recognize the moment, and honesty not to call mezcal what is not mezcal.

To distill is not to separate. It is to see with clarity.

The master mezcal maker knows that mezcal is not made to be admired. It is made to be drunk. To enter another body and transform it.

The consciousness that distills has the same question: once you have distilled reality, what do you do with it?

The next time you define something important — a relationship, a decision, who you are — do it like the master mezcal maker: cook, crush, ferment, heat. Collect what rises. Keep what remains. And when you have the distillate in your hands, do not store it: use it.
