For many people, chocolate is a guilty pleasure, a sweet dessert to be avoided. But what if I told you that in its purest form, in the past, it was used as real money?

The Mayans and Aztecs revered cacao so much that they used it as a true currency. At that time, a rabbit would cost you 10 cacao beans, and a high-quality worker would cost 100 beans. To the ancients, this plant wasn’t just a snack, it was gold in the truest sense of the word.

What is raw cacao?

Its scientific name is Theobroma cacao, which literally translates to “food of the Gods.” But there is a huge difference between this divine plant and the one you find on grocery store shelves.

Raw cacao is obtained from beans that are not roasted and dried at low temperatures (usually below 45 degrees). It is a minimally processed form of cacao. With this process, the most sensitive biologically active components are retained. In classic cocoa, these components are destroyed by high temperature or by an alkalization process (Dutch Process).

According to research, alkalized cocoa can lose up to 60–90 % of its polyphenols, and in this way its antioxidant power is reduced. By the time it reaches your cup, the standard stuff is often stripped of its power. This is the reason why raw cacao is considered more valuable, more concentrated and closer to the original nutritional profile of the plant.

The Antioxidant Champion

If you’re looking for cellular protection, raw cacao is the undisputed heavyweight champion. It has more than 40 times the antioxidants of blueberries and contains more antioxidant power than goji berries, red wine, and blueberries combined.

Such compounds help reduce oxidative stress, which is especially important in a modern lifestyle, which often leads to accelerated aging and inflammatory processes.

The following antioxidants (catechins, flavanols and procyanidins) have a positive effect on the health of blood vessels, blood pressure and general cellular protection.

A Mineral Powerhouse

For many people, milk is still the main food for bone health, but in fact, raw cacao contains more calcium than cow’s milk.

The “Bliss Molecule” and Mental Health

Raw cacao is beneficial for mental and physical health thanks to a combination of bioactive compounds. Research shows that regular consumption of cacao rich in flavanols can improve endothelial function and increase nitric oxide production.

When it comes to the psychological moment, raw cacao contains theobromine, anandamine and phenylethylamine.

How to use raw cacao properly

To obtain maximum health benefits, it is important to use raw cacao in a way that preserves its sensitive nutrients. Pouring it with boiling water or milk is the biggest mistake. High temperatures can reduce antioxidant activity.

The Golden Rule”: Don’t “kill” your cacao. It is best to prepare cacao with warm (not boiling) liquid, at 60–70 degrees. It can be mixed with chia pudding, oatmeal, or added to smoothies. This way its intense flavor and nutritional value are preserved.

In some people, especially those sensitive to stimulants, theobromine can cause rapid heartbeat or trouble sleeping if taken later in the day. Therefore, it is beneficial and advisable to consume raw cacao in the first part of the day. For the rest, it can be a great ritual for energy, focus, mineral supply and better mood.

How to recognize real raw cacao:

  • The package should clearly say RAW.
  • The color should be a lighter, pale brown. In roasted/alkalized cacao, the color is dark brown, due to the high temperatures.
  • Check the ingredients; it should be 100 percent raw organic raw cacao powder. Attention: if you see potassium carbonate or acidity regulator, this means that the Dutch process (alkalization) was used, which destroys the antioxidants.
  • Taste and smell: Raw cacao has a specific, slightly sour and very bitter taste. If it smells too sweet or roasted, it is not raw.
  • Price: Quality costs. Raw cacao is always more expensive than regular cacao.

Additional tip: If the package says “cold pressed” or “non alkalized”, then that is it. Cheers!
