Roasted Shallot & Garlic Bread That Tastes Like Home

I didn’t grow up calling it garlic bread. In my grandmother’s kitchen in Sweden, it was just bread. Sometimes toasted, sometimes soft, always smelling like butter and onions. The roasted garlic and shallots came later, once I had my own kitchen and a few hungry kids to feed after work.

Once they’re soft, you mash them into a paste and spread that magic on thick slices of your favorite loaf. I add cheese too, because I’ve got kids and cheese makes dinner disappear faster.
