Connecting on Mid-Night Falls, July Part 4

Happy July to all. It has been HOT HOT HOT in New York and many places. Interesting how we wish for hot weather and find it annoying when we get it. I was in Manhattan on Sunday, attending a 90th birthday party. It was wonderful in every way. Living in Suburbia, I forget the feeling of towering buildings and throngs of people. A nice place to visit… I never wanted to live in the city. I hope you enjoy the next recipe. Judy

Easy Watermelon, Peach, Feta Salad

For the watermelon peach salad

  • 4 cups watermelon (cubed)
  • 3 peaches (sliced)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup feta cheese crumbled, (optional)
  • Mint leaves (Optional)

For the honey lime dressing

2 tbsp olive oil

1 tbsp fresh lime juice

1 tsp honey (optional)

Salt and black pepper (to taste)

Instructions

In a large bowl, combine the watermelon cubes, peach slices, and red onion.

4 cups watermelon,3 peaches,1/2 red onion

In a small bowl, whisk together the olive oil, lime juice, honey (if using), salt, and black pepper.

2 tbsp olive oil,1 tbsp fresh lime juice,1 tsp honey, Salt and black pepper

Drizzle the dressing over the fruit and gently toss just until coated, being careful not to break up the fruit too much.

Sprinkle with feta cheese

1/2 cup feta cheese,

Serve immediately for the best texture and flavor. —
