How I finally stopped making idlis that double as hockey pucks.

I’m going to be completely honest: for the longest time, my idlis were so hard you could’ve used them to patch a hole in the driveway. I’d follow these perfect, clinical recipes I found online, and every single time, I’d end up with these flat, sad little discs that tasted more like rubber than food. It wasn’t until I stopped treating my kitchen like a chemistry lab and started actually listening to the ‘vibe’ of the batter — and some very blunt advice from my aunt — that things finally clicked. If you’re tired of failing at this, here’s the messy reality of what actually works.

Look, I’ll be real with you — my first few attempts at idli were absolute disasters. I’m talking flat, greyish discs that you could’ve used as frisbees. My aunt finally saw me struggling and told me I was overthinking the science and ignoring the “vibe” of the batter.

Here is the messy, honest truth about making idlis that actually taste like something.

Stop measuring like a chemist People say 4:1 or 3:1 for the rice and dal. Honestly? Just use a regular coffee mug. Four mugs of idli rice, one mug of whole urad dal. If you’re a few grains off, the world won’t end. But for heaven’s sake, make sure it’s the fat idli rice. If you use Basmati, you’re just making expensive porridge, not idli.

The Water Situation Forget just “using cold water.” I actually keep a dedicated half-melted ice brick in a jug because if the batter gets even slightly lukewarm, it’s game over. You’re aiming for this weird, puffy texture — think more like a thick shaving cream than a food product. And that water test? It’s annoying to do, but if that little blob of dal sinks to the bottom of your glass like a stone, you haven’t ground it long enough. Just keep going until it stays on the surface. If it doesn’t float, your idlis will be like rubber balls.

Mixing is Gross but Necessary Forget the spatula. Wash your hands and get in there. There’s something about the heat from your palms — and yeah, the natural bacteria — that makes the fermentation go crazy. I usually sit there squishing the rice and dal paste together for like five minutes until it’s one cohesive, bubbly mess.

The Smell Factor You’ll know it’s ready when you open the lid and get hit with that sharp, fermented funk. It’s not a “bad” smell, but it’s definitely strong — sort of like a sourdough starter having a mid-life crisis. If I wake up, check the pot, and the batter is sitting there flat and sad, I don’t even bother steaming it. I just salt the hell out of it, throw in some chopped onions, and fry it as uttapams. No use fighting a batter that didn’t want to grow up.

The “Scoop” Trick When it’s time to steam, don’t stir the batter to “smooth it out.” You’ll kill it! Just take a gentle scoop from the top.

The “Don’t Touch It” Rule The biggest mistake is the ego — thinking you can plate them the second the steam stops. If you touch them while they’re still screaming hot, they’ll just disintegrate and stick to the mold like glue. I usually just go check my emails or something for five minutes. Then, I flip the whole tray over and literally splash tap water on the back of the metal. It sounds aggressive, but that thermal shock is the only way they’ll release without leaving half the idli stuck to the tray. Use a wet spoon, shove it under the edge, and pray.
