My Toddy Coffee Concentrate Recipe

It’s that time of the year. If it’s already as muggy where you are as it is here in St. Louis, it is essential to keep cold coffee concentrate in your fridge.

Here’s my Toddy recipe that has kept me cool and caffeinated for years.

What you’ll need

How to do it

  1. With your filter and cork in place, add 2 cups of water.
  2. Gently pour in your ground coffee. The main goal this entire time is to not disturb things so much that fines settle on the filter (which also means no stirring).
  3. Pour 3 cups of water slowly in a spiral from the inside out, getting as much coffee wet as possible.
  4. Wait 5 or 10 minutes to let the fresh coffee degas, then pour the remaining 4 cups in a spiral from the outside in. All grinds should now be fully saturated.
  5. Let sit in the fridge for 22 hours before taking it out, popping the cork and letting it drip.

The Toddy filter is ceramic, and can practically last forever. Keep it in a cup of water with a single drop of bleach between brews. Rinse well before each use, and your filter will be going strong for a long time.
