Max complained that our dinner was swimming out of bounds as the balls dissolved straight into the hot oil.
The mixture had not chilled long enough. Macaroni and cheese that goes into hot oil without being frozen solid has no structural integrity against the heat. The outer breading cannot set fast enough and the filling pushes through before a crust can form.
Thirty minutes in the freezer until completely solid is not a suggestion. That frozen core is what holds the shape long enough for the panko coating to seal into a crust before the interior gets anywhere near melting temperature.
The second discovery was an accident. Max dropped a fully breaded ball back into the egg wash by mistake and we shrugged and rolled it through the panko a second time. That ball came out twice as crunchy as the rest of the batch with the cheese locked so tightly inside it barely moved when bitten. Now every single one gets double coated. Egg wash, panko, egg wash again, panko again. That second layer is the difference between a crust that shatters and one that just crumbles.
The oil temperature also matters. Too cold and the breading absorbs grease while the center stays frozen. Too hot and the outside burns before anything inside melts. Steady at 350°F is where the crust turns deep golden and the filling goes perfectly molten at the same time.
