- 1 tsp red chili powder

Method
- Soak the soya chunks in hot water for 10–15 minutes.
- Drain completely and squeeze out excess water.
- Heat a grill tawa or pan and add a little oil.
- Add mustard seeds and cumin seeds. Let them crackle.
- Add diced garlic and ginger. Sauté for 30–60 seconds until fragrant.
- Add the sliced onions and cook until translucent.
- Add green chilies and chopped tomatoes.
- Season with salt, turmeric, red chili powder, and coriander powder.
- Cook until the tomatoes become soft and mushy.
- Add the drained soya chunks and mix well so they are coated with the masala.
- Cover with a lid and cook on medium-low heat for 3–4 minutes.
- Remove the lid, stir once, and cook for another minute if needed.
