6 Healthy & Tasty Veggies You Can Plant Now and Enjoy in Fall & Winter
Veggies are delicious (when prepared correctly) and nutritious. And while you may think of fresh veggies as a summer thing, there are some vegetables you can plant in mid-summer and enjoy in the fall. These are mostly root vegetables although there are some other veggies you can enjoy in tall and winter if you plant them in the summer. Six suggestions are offered below.

1. Spinach
A good source of iron and potassium, spinach is easy to grow — and it withstands the early fall temperatures fairly well. Plant it in mid or late summer and in about 3–4 weeks you’ll have fresh baby spinach. It’s also a veggie that grows just about anywhere — even with limited sunlight or partial shade.
2. Kale
Kale is cold-weather hearty as well, meaning it can be planted in late summer or even early fall and you’ll still be rewarded with kale in about three weeks. Kale can be used for salads — or it can be made into homemade kale chips with olive oil.
3. Lettuce
Lettuce comes in several versions (and colors — other than green). It’’s also an easy veggie to grow in the ground or in pots. It only takes about a month to start getting lettuce once you plant it in the middle or summer or later in the summer closer to fall (or it grows in even less time in some instances, depending on what kind you plant). It’s also a veggie with plenty of nutrients you can enjoy if you use a light dressing.
4. Radishes
Radishes come in a variety of colors and textures. If you get the drwrf radishes, they will grow a bit faster. Radishes can be planted about a month or so before fall. These veggies are hearty and they tolerate cold well, so it it does get cold before fall officially starts, you’ll be good.
5. Carrots
Carrots are root veggies that grow well in late summer. If you plant theem about a month or so before fall, you’ll have plenty of carrots for fall and winter. Carrots are good for your eyes, bones, thyroid, brain, and even your kidneys and spinal joints to some extent.
6. Cilantro
Cilantro grows well in late summer — and it’s easy to harvest. It’s almost entirely edible, too (the plant). It grows well in pots and containers and on windowsills.
