Max looked at his cup, saw the soggy biscuit sinking into pink liquid, and asked why we were eating strawberry soup for dinner.
The watery yogurt and the warm juicy fruit had gone straight onto the dry biscuit crumbs and turned them into mush before anyone picked up a spoon.
Two things fixed it.
The first was the fruit. Fresh strawberries release a surprising amount of juice once they are cut. That juice is what destroys the biscuit base. Draining the chopped berries before they go anywhere near the cream keeps the layers clean and the crumbs intact all the way to the bottom of the glass.
The second was the cream. My grandmother used to stop my spoon every time I mixed too fast. She said stirring hard knocks all the air out of whipped cream before it ever reaches the glass and what goes in fluffy comes out flat. The fold has to be slow and circular from the bottom upward. That trapped air is what makes the cream layer look thick and light at the same time rather than dense and heavy.
