Avocado Salsa

My apologies for only having one picture. This is the final product picture. I decided to make avocado salsa because it was my grandmas 90th birthday party and it was a big event. Pretty much all my relatives were there plus some friends. We had a lot of food and I volunteered to make this avocado salsa. I have to say, I think it was a success. I thought it was delicious and it was gone by the end of the party. Here’s how I did it.

I chopped up a red bell pepper, a red onion, a tomato, and two cans of olives. I also added like a cup of frozen corn and a tiny bit of jalepeno. If you’ve read my other posts, you know I am not a fan of spicy. I do like a tiny kick though. Then I mixed together some lemon juice, olive oil, minced garlic, salt, and pepper. I mixed the dressing in with the chopped veggies and set it covered in the fridge. It said to let it sit overnight, but I did not read that part. I made the salsa the morning of the party. It set for probably about six hours and it was fine. Still delicious. Once I was ready to serve it, I added two avocados, so they didn’t get all brown. We just ate it with tortilla chips and put it on our tacos. And there you have it!

It was a super easy recipe. The longest step was having to cut everything up. Honestly, I do not like this step. If you have one of those fancy veggie choppers, you could definitely use that. I have one, but I decided to just chop by hand. For the love. But, with all that said, it is a very fresh tasting quick dish that will be a hit at your summer parties.
