November is often cold and dark. The wind howls, and even wearing gloves and hats, you chill to the bone in New York. Make some warm, easy cookies. Add whatever you like to the batter. You deserve it!

2-Ingredient Pumpkin Cookies

Ingredients

  1. 1 (15.25-oz.) package spice cake mix ( I used white cake mix)

  2. 1 (15-oz.) can pumpkin

  3. 1 cup dried canberries (optional)

  4. 1 cup dark chocolate chips (optional)

  5. Powdered sugar (optional)

Directions

Preheat your oven to 350°F. Line cookie sheets with parchment paper for easy cleanup, or spray the baking sheet with oil.

Mix Ingredients

In a large bowl, mix the cake mix, canned pumpkin, and any optional add-ins like cherries or chocolate chunks. Mix well; no cake mix should be showing. Drop tablespoons of dough onto the prepared cookie sheets, spacing each one about 2 inches apart. Flatten each mound gently with damp hands or a spoon to ensure even baking

Bake the cookies for 10 to 12 minutes, or until they are set. Let them cool on the cookie sheets for 2 minutes, then transfer them to wire racks to cool completely. If desired, dust with powdered sugar before serving.

How to Store Leftover Pumpkin Cookies

Store any leftover pumpkin cookies in an airtight container to maintain freshness. They should stay delicious for up to 3–4 days.

They are soft cookies. I made them with chocolate chips, then with dried cranberries. They make a lot. Very moist, sweet, and chewy.

They made 24 small cookies. I prefer them FROZEN. I divided the batter into 3. One with just cranberries, one with just chocolate chips, and the third with all. No powdered sugar topping, it was sweet enough. Judy
