Sweet ruby beetroot, earthy spinach, fragrant parsley, fluffy rice, and a splash of creamy milk brightened with fresh lemon create a dish that is comforting, colorful, and entirely its own. Ruby Garden Pilaf isn’t a traditional family recipe. It’s a home-grown creation inspired by simple ingredients, curiosity, and the joy of cooking without borders.

Ingredients
- 2 cups cooked long-grain white rice
- 2 medium cooked beets, sliced or diced
- 5 oz (about 140 g) fresh spinach
- ¼ cup fresh parsley, roughly chopped
- ½ cup whole milk
- 1 tablespoon fresh lemon juice
- 1 teaspoon freshly ground black pepper
- Salt, to taste
- 1 tablespoon butter or olive oil (optional, for sautéing)
Instructions
- If using butter or olive oil, warm it in a large skillet over medium heat.
- Add the spinach and cook for 2 to 3 minutes until just wilted.
- Stir in the parsley and beetroot, cooking another minute to warm everything through.
- Add the cooked rice and gently fold until the ingredients are evenly combined.
- Pour the milk into the skillet and stir gently.
- Add the fresh lemon juice, black pepper, and salt to taste.
- Continue cooking for 3 to 5 minutes, stirring occasionally, until the milk lightly coats the rice and most of the liquid has been absorbed.
- Serve warm, garnished with a little extra parsley and freshly cracked black pepper if desired.
