Ruby Garden Pilaf isn’t a traditional family recipe. It’s a home-grown creation inspired by simple ingredients, curiosity, and the joy of cooking without borders.

Ingredients

  • 2 cups cooked long-grain white rice
  • 2 medium cooked beets, sliced or diced
  • 5 oz (about 140 g) fresh spinach
  • ¼ cup fresh parsley, roughly chopped
  • ½ cup whole milk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon freshly ground black pepper
  • Salt, to taste
  • 1 tablespoon butter or olive oil (optional, for sautéing)

Instructions

  1. If using butter or olive oil, warm it in a large skillet over medium heat.
  2. Add the spinach and cook for 2 to 3 minutes until just wilted.
  3. Stir in the parsley and beetroot, cooking another minute to warm everything through.
  4. Add the cooked rice and gently fold until the ingredients are evenly combined.
  5. Pour the milk into the skillet and stir gently.
  6. Add the fresh lemon juice, black pepper, and salt to taste.
  7. Continue cooking for 3 to 5 minutes, stirring occasionally, until the milk lightly coats the rice and most of the liquid has been absorbed.
  8. Serve warm, garnished with a little extra parsley and freshly cracked black pepper if desired.
