Miss me with that bull jive about needing to try stinky tofu in Taiwan. It smells like… well, you know. It doesn’t taste much better. They’d crucify me for that in Raohe. But if we’re talking food, that’s about the only thing I’m turning down here. You’ll get people hawking this and that — belts, snake blood, a good time. There’s other stuff, too, I just don’t know what it is — wouldn’t be able to justify the expense without knowing what it’s used for, whether it’ll actually 3x my libido. My rule is to start with what I know. Unctious pork belly bao and beef noodles; a croustillant chicken cutlet whose batter is more five spice than breadcrumb. Barring that, I look for lines. Reliably, they separate the cognoscenti from the commoners. Sometimes, that leads you to piping-hot lemon pepper king oyster mushrooms grilled to order. Other times, it leads you to a heaping plate of stinky tofu.
