How to Make It
Step 1: Start by preparing everything you’ll need. Wash the potato, carrot, and chicken, then cut them into small bite-sized pieces. Pat the chicken dry so it sears nicely later. Mince the garlic and keep it close at hand-once you start cooking, things move quickly.

Let the sauce thicken slowly, stirring occasionally so nothing sticks to the bottom. Stop cooking once the sauce has the rich, velvety texture you like-it should be thick enough to wrap around the noodles beautifully.

Step 4: Pour the curry chicken and its golden sauce over the udon noodles.

Mix well so every noodle is coated in that warm, fragrant curry. Take a big slurp-the chewy udon, tender chicken, and smooth sauce come together in the most satisfying way.

- If your chicken breast has been sitting in the fridge for a while and isn’t super fresh, drizzle 1 tablespoon of cooking wine along the side of the pan while stir-frying to remove any smell.
