  1. Raw Material Selection and Peeling Production begins with selecting mature but firm unripe plantains. These provide the ideal starch content for crisp chips. Workers or machines peel the plantains after washing to remove dirt. Industrial lines often use a peeling machine, which improves speed and reduces labor costs.

  2. Slicing The peeled plantains are then cut into thin, uniform slices. Thickness is important because it affects frying time and crispiness. Frying temperatures typically range from 160–180°C until slices become crispy and yellow-golden.

  5. De-oiling Once fried, excess oil must be removed to improve taste and shelf life. A de-oiling machine (centrifugal deoiler) spins chips at high speed to reduce surface oil. This maintains crispiness and prevents greasiness.

  6. Seasoning De-oiled chips are sent into a seasoning drum. A seasoning machine blends chips with selected spices — salt, cheese, chili, barbecue, or sweet coatings — ensuring uniform flavor distribution.

  7. Packaging Finally, chips enter the packaging stage. Automatic weighing and packing machines measure accurate quantities before sealing bags. Nitrogen filling may be added to prevent breakage and oxidation.
