How Traditional Gur Is Made-The Process Behind Real Jaggery

Most people think gur is simple. But the truth is, good gur is slow food.

Traditionally made jaggery begins with freshly harvested sugarcane. The cane is crushed, and only about 10–12% juice is extracted. That juice is filtered and then boiled gently, usually between 90–100°C. No rushing, no high flames.

As the juice heats, its colour deepens. A light, pale layer starts forming on the surface this is where impurities naturally rise. Instead of chemical clarifiers, traditional makers use natural plant-based extracts, often from vegetables, to help these impurities separate. Skilled hands skim them off slowly, again and again.

This step matters more than people realise. It’s where purity comes from.

As boiling continues, the liquid thickens and turns glossy, almost like honey. Stirring becomes constant. Timing becomes everything. At the right moment, the thickened liquid is poured into containers and gently rotated. As it cools, it begins to set first soft, then firm.

If you stop too early, it remains syrup. If you wait too long, it hardens unevenly.
