The best street food I’ve ever had was in Asia. Every little market was filled with the smell of delicious food. Every one of them was centered around an Asian staple, noodles. Learn how to cook them properly. You’d be surprised how quick and easy it is to make a delicious dinner. First, we’re going to soak our noodles in a bowl. Now these are rice noodles. Pour hot water over the rice noodles. Soak and rehydrate. If you have a wok, a regular-sized frying pan or a large pan with sloping sides, it’s really nice and hot, and the chicken breast is low in fat. Now cut it up and you have this little fillet. The secret to making it really nice and thin is to cut it into strips. Take the knife and flatten it out nicely on the board, and cut it in half like a scallop. We call this butterfly in the chicken. Take a rolling pin and gently roll the chicken. What it does is flatten it. That way you can make it even thinner and thinner. The chicken slices are so crispy that they’re crispy quickly. Basically it does that when it starts to get a little wet make it nice and smooth. Add a little flour. We want something really nice soft. Don’t work it too much now. When the ricotta hits the pan it stops expanding. That’s what I want to cut into a nice soft fragrant ball.
