How Long to Sous Vide Filet Mignon?

Time is your friend here, but you have a wide window. For a standard 1.5 to 2-inch thick filet:

  • Minimum Time: 1 hour. This is enough to heat the steak through and cook it to your desired temperature.
  • Ideal Time: 1.5 to 2.5 hours. This gives the fat and connective tissues more time to break down, enhancing that buttery texture.
  • Maximum Time: You can safely go up to 4 hours without the texture starting to get a little mushy. It’s very forgiving!

How to Sous Vide Filet Mignon?

This process is simple, but the results are spectacular.

Step 1: Set the Bath: Attach your sous vide machine to a pot or container and fill it with water. Set it to your desired temperature (remember, 131°F / 55°C for medium-rare is chef’s kiss).

Step 4: The ICE BATH Trick (Pro Move): When the time is up, take the bags out of the water. For an even better sear, plunge the sealed bags into a bowl of ice water for 5–10 minutes. This chills the very outside of the steak, preventing it from overcooking while you build that killer crust.

Step 5: Sear to Perfection: This is the most important step after sous vide! Pat the steaks incredibly dry with paper towels. Get your cast-iron skillet screaming hot with a little oil. Sear the steaks for 45–60 seconds per side, including the edges. In the last 30 seconds, throw in a tablespoon of butter, a few sprigs of thyme, and a smashed garlic clove. Tilt the pan and baste the steaks with the fragrant butter.

Step 6: Rest and Serve: Transfer the filets to a cutting board, let them rest for just a few minutes (they’re already perfectly rested from the sous vide bath!), and serve immediately.
