A reader asked: “Every Sunday, my husband fries two eggs in his little cast‑iron skillet. No problem. But when he cooks kielbasa first, pushes it to the side, and then plops in the eggs, they stick, and he grumbles.”

Eggs need a thin, stable layer of fat to keep them from sticking in cast iron. Think of it as a slipcover between the pan and the egg.

Kielbasa does release fat, but it’s not the same — it’s mostly protein‑laden juices and a little grease, more glue than cushion. Those browned bits, the fond, are wonderful for flavor but treacherous for eggs.

Instead of sliding across the pan, the whites grab onto those caramelized spots like Velcro. Add in the extra heat from cooking sausage first, and the eggs hit the iron too fast, seizing before they can set.

Don’t blame the skillet, it’s just that the surface needs a reset — a wipe, a knob of butter, or a drizzle of oil to restore that smooth layer.

Think of it this way: you want fond memories, not fond disasters. The fix is simple — scoot the sausage out, wipe the pan, or add a fresh layer of fat before cracking the eggs. Otherwise, those sunny‑sides will weld themselves to the iron every time.
