How a quiet night at Cascades became the perfect way to close the snow season

If you ever find yourself in Thredbo, a small alpine village tucked away in Australia’s Snowy Mountains, you’ll quickly realize it’s more than just about skiing and snowboarding. Beyond the slopes and bars, there’s also a surprising touch of elegance waiting for you. A fine dining experience high up in the mountains.
After living in the snowy mountains for a few months, I kept thinking about what it would be like to sit down and enjoy a proper meal at the very place where I work. Most of my time is spent in Thredbo’s main kitchen, and occasionally I get sent up to the mountain restaurants to help out. Each time I passed by, the aromas from the chefs’ dishes would tempt me endlessly.
As the snow season was coming to an end, I finally made a plan with a friend to have dinner at Cascades. It’s one of the few places in Thredbo where you can truly experience fine dining. That night wasn’t just about good food — it was also a little celebration. My friend had just earned her ski instructor certification, and it felt like the perfect excuse to toast to her achievement.
Cascades isn’t just a dinner spot. It actually runs almost the entire day, but in different forms. In the morning, it serves a breakfast buffet, usually catering to guests of the Alpine Hotel. By midday, the mood shifts to an à la carte lunch service, perfect for those taking a break from the slopes. But if, like me, you’re after a fine dining experience, then dinner is the time to come.
The atmosphere at night feels completely different from the daytime. The lights are dimmed. The setting becomes more elegant, and through the windows you can see the quiet mountain village settling into the evening. It’s this transformation that makes dinner at Cascades feel so special, like stepping into a whole new side of Thredbo.
The dinner menu at Cascades is refreshingly simple, offering just two options: a two-course set for AUD 75 or a three-course set for AUD 87. Each menu comes with a warm bread roll and a glass of the featured wine of the evening. Since I work in the kitchen, I had already been eyeing the dishes I wanted to try long before I sat down at the table. After looking through the menu together, my friend and I didn’t hesitate. We went for the three-course option at AUD 87. Neither of us wanted to miss out on the appetizers or the dessert.
For the appetizer, I went with the scallops. For the main course, I chose the steak. And to finish, a chocolate mousse for dessert. The wine pairing offered three choices: rosé, Prosecco, and Pinot Grigio. Since the menu included both seafood and dessert, I decided on the Prosecco. To be honest, the wine itself felt fairly standard. Pleasant enough, but nothing too memorable.
The scallops, however, completely stole the show. Beautifully plated, seared to absolute perfection, and finished with a touch of apple and a delicate sauce. They were simply unforgettable. That first bite was pure magic. Without exaggeration, the best scallops I’ve ever had in my life.

For the main course, we both chose the steak. Having worked in the kitchen, I had seen the chefs prepare and plate this dish countless times. Each presentation meticulously crafted. But sitting on the other side of the pass, as a guest, was an entirely different experience. It wasn’t just about taste, it felt like a performance for the eyes as well.
What impressed me most were the seemingly simple garnishes: crispy onion, fried shallots, carrots, and potatoes. At first glance, they looked ordinary. But together they elevated the flavor of the steak to another level. That’s the magic of cooking, I thought — the ability to transform the simplest ingredients into something extraordinary.

For dessert, I chose the chocolate mousse. It was a reminder of how simple ingredients can be transformed into something truly remarkable. The texture leaned more towards solid than airy, and with the very first bite I was struck by the intensity of the chocolate flavor. Rich and bold, yet never cloying, it carried just enough of cocoa’s natural bitterness to balance the sweetness. That balance made it impossible to stop at just one spoonful, I kept going back for more.

Dining at Cascades felt completely different from being in the kitchen where I usually work. The mindset shifts entirely on one side, it’s about savoring the atmosphere and the food. On the other, it’s about the rhythm and focus of work. To enjoy a fine dining dinner here at the end of the snow season, while also celebrating with a friend, felt truly special.
Compared to fine dining restaurants in the city, Cascades might offer fewer options on the menu. But having this kind of experience in the mountains makes it unique in its own way. For me, that night was the perfect way to put a full stop on this winter season.
If you ever find yourself in Thredbo, I’d recommend setting aside one evening before your trip ends to experience fine dining at Cascades. It might just become one of the most memorable parts of your mountain getaway.
