If I had my way, I would not buy any processed foods. I would cook everything from scratch, and that’s what I usually do.

My spouse, however, is a almost slave of his tongue, and he buys a lot of processed foods. I don’t eat much of it, but whatever I do eat, even occasionally, makes me feel uncomfortable. I don’t know if other people feel these adverse impacts or not, but I am very vigilant and I notice the signals my body gives.

For two days, I had been eating a few dollops of the crème brûlée cake he bought. And today morning, when I woke up, there was mild edema around one eye. I wasn’t too bothered because it was mild and I knew that after half an hour of walking around, it would go away, and it did.

Then in the afternoon he made pasta with processed chicken nuggets and lots of sauce.

It was delicious, no wonder, but within fifteen minutes of eating it, I felt tingling in my nostrils. It seemed my heartbeat was slightly faster. I also noticed windpipe tightening. Some skin crawling too.

All signs of hypersensitivity to food preservatives. Most people may not even notice these responses.

But about ten years back, I had a terrible cockroach allergy. I suffered for four years. It’s as if I did another PhD in health science, and now I notice even the slightest inflammation in my body.

I won’t let this allergy affect me. I’m going to cook dinner from scratch, rice, lentils, and vegetables.

But I keep wondering how we have come to this stage where food, instead of nourishing us, is making us sick.

Yes, the basic ingredients are the same. Cereal, sugar, salt, oil, fat, but there are too many preservatives in processed foods. These ingredients are seen as inflammatory agents, it’s because our immune system has not evolved to digest them. We don’t have the enzymes for many of these chemicals. Just like eating an Amanita mushroom can kill us because we lack the enzyme to digest it, similarly, the body doesn’t have the enzymes to handle many preservatives.

And many of them act like estrogen mimics. Estrogen mimics are carcinogens. So, we push ourselves toward cancer in the pursuit of something easy and delicious.

I keep writing on this topic because, as they say, a helping hand is better than a preaching mouth. I don’t want to pray after someone gets sick. I want to warn before it happens.
