The biggest mystery, scientists say, is what lies inside a black hole. Perhaps the second-greatest mystery is why street pani puris (golgappas) taste infinitely better than those served in high-end restaurants.

I have tried pani puris at Haldiram’s, Bikanervala, and countless cafés and premium eateries, but none have ever tasted like the golgappas sold by the street hawkers near my home in Bihar, the ones I grew up eating. Some will say it is the aloo-chana filling. Others will insist it is the magic hidden in that single drum of spiced water. A few will argue endlessly over atta versus suji puris. But I do not wish to demystify it.

Certain things are better left unexplained.

Perhaps taste is not merely a matter of ingredients; perhaps it is also memory, place, dust, weather, familiar voices, and the joy of standing by a roadside cart among strangers who somehow feel like neighbours. Maybe the secret of those golgappas belongs not to recipes but to childhood itself.

And so, long ago, I made a quiet pledge: I would stop searching for that taste outside Bihar. Some mysteries deserve reverence more than answers.
