Note: If you have duck fat on hand, use it to grease the baking dish instead of butter — it adds a deliciously rich flavor that complements the potatoes beautifully.

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt 4 tablespoons of the butter over medium heat. Add the onions and a pinch of salt. Cook gently until soft and golden, about 15–20 minutes. Stir in the garlic and thyme and cook for one minute more. Set aside.
  3. Butter a baking dish (around 9x13 inches) — or use duck fat as noted above. Arrange 2 layers of potatoes, overlapping slightly. Season with salt and pepper. Add a layer of the sautéed onions, then continue layering with potatoes and onions, finishing with potatoes on top.
  4. Pour the warm stock over the dish until it just covers the top layer. Press down gently to help the potatoes absorb the broth.
  5. Dot the top layer of potatoes with the remaining 2 tablespoons of butter.
  6. Cover loosely with buttered foil and bake for 1 hour. Remove the foil, and return to the oven for another 30 minutes, or until the top is golden and the potatoes are tender.
  7. Let the dish sit for 20 minutes before serving. The potatoes will soak up the remaining stock.

A white Burgundy, such as Mâcon-Villages or Saint-Véran, offers brightness and minerality that lift the dish’s richness.
