The beef had steamed instead of seared. No crust. No caramelization. Just pale, grey, watery crumble that tasted nothing like a diner burger.

The fix was removing something from the pan, not adding anything to it.

Most people reach for oil or butter before the meat goes in. That is exactly what prevents the crust from forming. As the lean beef hits a completely dry, roaring hot pan and gets pressed down firmly, it releases its own fat. That fat fries the outer edges from underneath and creates what Max calls the secret diner crust. Deep brown. Savory. The kind of caramelization that makes a bowl of ground beef taste like a proper smash burger.

The potatoes have their own rule too. They need to be completely dry before the oil touches them. Any surface moisture and they steam in the oven instead of roasting and the edges never crisp up properly.
