Curd Rice
This heartthrob of every Indian is the simplest dish that anyone can make. Prepare rice till soft and slightly gooey. Once cooled, add fresh curds, salt, and a little water. Mash well. Temper with cumin seeds, mustard seeds, and curry leaves. Serve chilled with lime or mango pickle.

Dahi Wada
A sweet, cold, and savoury delight. Soak urad dal for 3–4 hours, grind into a fine paste with salt, ginger, and hing. Shape into small doughnuts and deep-fry. Soak in water, squeeze gently, then immerse in beaten curds with salt and a pinch of sugar. Temper with mustard seeds, garnish with coriander and chilli powder

Kadhi Pakoda
A comforting curd-based gravy. Mix curds with besan and water into a smooth batter. Temper with cumin, mustard seeds, curry leaves, ginger, and dry red chillies. Add the curd mixture, turmeric, and salt, and bring to a boil. For pakodas, fry spoonfuls of besan batter with onions and spices until golden, then add to the kadhi.

Shrikhand
A popular sweet from Maharashtra and Gujarat. Strain curds for 6–8 hours, whisk till smooth, and add sugar, cardamom, and saffron milk. Chill before serving.

Mishti Doi
A classic Bengali sweet yoghurt made by thickening milk, sweetening with caramelised sugar or jaggery, and fermenting with curd. Serve chilled.
