These cinnamon rolls come out soft, buttery, filled with warm gingerbread spice, and they make any home feel like the holidays.

Step-by-Step: The Best Gingerbread Cinnamon Rolls

Ingredients (Makes 12 rolls)

Dough

  • ½ cup warm whole milk (around 110°F / 43°C)
  • 1 packet (0.25 oz) active dry yeast
  • ¼ cup granulated sugar, divided
  • 2 teaspoons kosher salt
  • 4 ¾ cups all-purpose flour, divided (plus extra for rolling)
  • ½ cup sour cream
  • 6 tablespoons unsalted butter, softened
  • 3 tablespoons unsulfured molasses
  • 1 large egg, lightly beaten
  • Cooking spray

Filling

  • ½ cup unsalted butter, room temperature
  • 1 cup packed light brown sugar
  • 1 tablespoon unsulfured molasses
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • ½ teaspoon ground cloves

Glaze

  • 4 ounces cream cheese, room temperature
  • 4 tablespoons unsalted butter, room temperature
  • 1 ½ cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1 tablespoon whole milk (plus more if needed)

Step-by-Step Directions

Step 1 — Activate the Yeast In a small bowl, combine the warm milk, the yeast, and 2 tablespoons of the sugar. Stir gently and let it sit for about 5 minutes, until the top becomes foamy.

Step 2 — Start the Dough In the bowl of a stand mixer fitted with the paddle attachment, add the salt, 4 cups of flour, and the remaining 2 tablespoons of sugar. Mix on low speed just to combine. With the mixer still running, pour in the yeast mixture, then add the sour cream, softened butter, molasses, and the egg. Keep mixing until a dough begins to form — about 1 to 2 minutes.

Step 3 — Knead the Dough Switch to the dough hook attachment. Knead on medium-low until the dough becomes smooth and elastic — about 6 to 9 minutes. If the dough feels sticky and does not pull away from the bowl, add the extra flour 1 teaspoon at a time, just until it becomes workable.

Step 4 — First Rise Lightly coat a large bowl with cooking spray. Place the dough inside and turn it once to coat. Cover with a clean towel or plastic wrap. Let rise in a warm, draft-free spot for 1 hour 30 minutes to 2 hours, or until doubled in size.

Step 5 — Roll It Out Spray a 13 x 9-inch baking pan with cooking spray. Punch the dough down gently. On a lightly floured surface, roll it into a rectangle about 18 x 10 inches.

Step 6 — Add the Filling Spread the ½ cup butter evenly over the surface, leaving a ½-inch border along one long side. In a separate small bowl, mix the brown sugar, molasses, cinnamon, ginger, and cloves. Sprinkle this mixture evenly over the butter, then gently press it in with a rolling pin.

Step 7 — Roll and Shape Starting from the long side without the border, roll the dough tightly into a log. Pinch the seam to seal.

Step 8 — Slice and Second Rise Cut the log into 12 equal rolls (about 1 ½ inches each). Place them in the greased pan with a little space between each one. Cover and let rise again in a warm place for 45 to 60 minutes, until puffy. During this time, preheat your oven to 350°F (175°C).

Step 9 — Bake Bake the rolls uncovered for 25 to 30 minutes, until golden brown. Let them cool in the pan on a wire rack for 15 minutes.

Step 10 — Make the Glaze In your mixer bowl with the paddle attachment, beat the cream cheese and butter together on medium speed until smooth. Add the powdered sugar, vanilla, and milk. Beat again until creamy. If needed, add more milk 1 teaspoon at a time to reach the perfect drizzling consistency.

Step 11 — Finish and Serve Spread the glaze over the warm rolls. Serve right away and enjoy every cinnamon-ginger, soft-buttery bite.
