Ingredients:

1 whole chicken (about 4–5 pounds)

2 lemons

4 cloves of garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons fresh parsley, chopped

4 tablespoons olive oil

Salt and pepper, to taste

4–5 medium-sized potatoes, quartered

2 cups baby carrots
-
1 onion, cut into wedges
Instructions:

Preheat your oven to 425°F (220°C).

Rinse the chicken inside and out, then pat it dry with paper towels.

In a small bowl, combine the minced garlic, chopped rosemary, thyme, parsley, olive oil, salt, and pepper to create a herb mixture.

Carefully loosen the skin of the chicken by gently sliding your fingers between the skin and the meat, being careful not to tear the skin.

Rub half of the herb mixture under the skin of the chicken, spreading it evenly over the breast and thighs.

Cut one lemon in half and squeeze the juice over the chicken. Place the squeezed lemon halves inside the chicken cavity.

Take the second lemon and slice it into rounds. Set aside.

Rub the remaining herb mixture all over the outside of the chicken, ensuring it is evenly coated.

In a large oven-safe pot or Dutch oven, place the quartered potatoes, baby carrots, and onion wedges.

Place the seasoned chicken on top of the vegetables in the pot.
