Jicoba Chicken — A 30-Year Busan Franchise That Pairs Perfectly with So-maek

Jicoba is a Korean chicken franchise that started in Busan in 1994 and has survived for decades in a market where food trends change quickly.

That alone says something. In Korea, chicken brands come and go, so a franchise that stays around for this long usually has at least one thing people keep coming back for.

For me, that thing is not the salt-grilled chicken. It is the boneless yangnyeom chicken.

Jicoba’s sunsal yangnyeom comes in several spice levels, and level 3 is the sweet spot for me. It is spicy enough to make me sweat a little, which is exactly when so-maek — soju mixed with beer — starts to make sense.

The sauce is the real reason this chicken stands out. It goes unusually well with rice. Most Korean fried chicken does not automatically make me think of eating rice with it, but Jicoba does.

There are a lot of rice cakes in the sauce, so adding rice can become carb-heavy. Still, leftovers with microwave rice the next day make complete sense.
