Add steamed beetroot, carrots, and tomatoes along with almond and coconut milk puree. Process again in a mixer grinder until a smooth purée is achieved, adding water as necessary. Add salt, cumin powder, and black pepper powder and simmer in steamer for 5 minutes.

- Gluten-free Amaranth Almond Pistachio Cookies/Fasting Cookies
Ingredients
1.1/4 cup Amaranth Flour
1/2 cup raw cane sugar
45 grams of almond meal
1/2 cup and 1 tbsp ghee or butter

- Payasam Kheer or South Indian Badam Halwa Recipe
Ingredients
1/2 cup Seerga samba rice or any other rice
5 cup Almond milk
1 cup milk
1/2 cup Sweetened condensed milk
Sugar as needed
Pinch Salt
1 tsp Saffron
2 tbsp Cardamom powder

Get the necessary materials and place them near the cooking area. Soak saffron in a bowl with 2 tbsp heated water to get a nice color. Cook rice in a cooker with 1 cup of milk and 1 cup of water in a bowl.
Bring almond milk to boil. Add cooked rice to the boiling milk. Lower the heat and keep stirring. Add saffron and continue stirring. Now, the color of Payasam should be yellow. Allow it to condense.
Pour it into the sweetened condensed milk and continue stirring. Taste it. If you want it sweeter, add sugar to your taste. Also, add cardamom powder and stir. Lower the fire and allow the Payasam to cook over simmering heat for another 5 to 10 minutes. Turn off the stove and transfer the Payasam to a serving bowl.
- Almond Khoya Sweet Paratha
Ingredients
For outer cover-
1 cup atta (whole wheat flour)
Water to make dough
1 pinch salt
Ghee or butter for shallow frying
For stuffing -
1/2 cup khoya(milk solids)
1 tbsp powdered sugar
1/4 tsp cardamom powder
1/2 cup almond powder
1/4 tsp nutmeg powder
Cooking Directions
First, take wheat flour and add salt. Gradually add water to make soft dough. Keep it aside. Take Khoya in a Borosil glass bowl to make stuffing. Heat it for about 20 seconds to ensure the Khova becomes soft
Now transfer the soft Khova to a plate. Add powdered sugar, cardamom powder, almond powder, and nutmeg powder. Mix everything well with your hand and make dough. Divide the dough into four parts and keep it aside.
Now, take a small part of wheat dough and roll it like a thick Paratha. Place the stuffing in the center. Now, seal the opening, holding the edges. Roll gently to give a shape of Paratha. Fry the paratha in a pan by spreading ghee. Evenly cook the Paratha on both sides. Now, your Badam Khova sweet Paratha is ready to serve.
- Kashmiri Saffron Phirni With Almond Rose Chikki
Ingredients
250 ml full cream milk
1/8 cup semolina
3 tbsp sugar
1 tbsp ghee
1 pinch saffron
1 tbsp warm milk
1 tbsp blanched almonds slivered
1 tsp cardamom powder
1 tbsp pistachio nuts slivered
For Almonds rose chikki:
2 tbsp sugar
2 tbsp Kashmiri gulab syrup
1 tbsp almond flakes
1 tbsp dry rose petals
Cooking Instructions
Melt ghee in a cooking pan and add semolina. Roast it on low flame for 8–10 minutes. Pour milk on it stirring continuously to ensure no lumps get formed. Dissolve saffron strands in warm milk. When the semolina milk mixture thickens, add sugar and saffron milk. Stir constantly, cook till the sugar melts, and take it off the flame.
Add 1/2 tsp slivered almond, cardamom powder, pistachio nuts, and mix well. Transfer it to a serving bowl. Garnish with pistachio nuts and blanch slivered almonds. Chill in the refrigerator till the time of serving. Now let’s make almond rose chikki. Add dry roast almond flakes to a small Tadka pan. Transfer roasted almond flakes to a plate
Add Kashmiri gulab syrup and sugar to this Tadka pan. Cook till the mixture thickens and then take it off the flame. Add rose petals, and roasted almonds, and mix well. Pour in a greased plate and let it cool at room temperature.
Break almond rose chikki into small pieces. Spread around pistachio nuts flakes and almonds in Chilled Kashmiri Saffron Phirni and serve.
- Summer Sweet Badam Halwa
Ingredients
1/2 cup almonds/badam
¼ cup milk
Hot water to soak
Cooking Directions
Firstly soak ½ cup almonds in hot water for about half an hour. Now, peel the badam skin and transfer those almonds to the blender. Add in ¼ cup milk. Blend it to a smooth paste and then serve.

- Romanesco Side Salad
Ingredients
1 medium Romanesco broccoli
2 tbsp honey
1/2 lemon
Handful almonds

Trim your Romanesco and break the individual florets into small pieces. Place them into a steamer and let them steam for 8 minutes. Squeeze the juice from half of the lemon into a bowl and add honey to the mixture. Set it aside. Chop your almonds and place them in a dry hot pan to toast.

500 gm fresh Green Almonds

2–3 cubed Mangoes

Ingredients
1 cup fresh curd/dahi
1/4 tsp roasted cumin seeds powder
1 tsp sugar powder
Sendha Namak/Salt
2 tbsp roasted almonds flakes
1/2 cup finely chopped Amrood/guava pieces
For seasoning
1/4 tsp ghee
1/4 tsp finely chopped green chilli
1/4 tsp cumin seeds
Cooking Instructions
Remove the seed portion of Amrood/guava and chop them into small pieces. Whisk curd and add sugar powder, roasted cumin seeds powder, and Sendha Namak/salt in it. Mix well.
Add chopped Amrood/guava pieces and roasted almond flakes, and mix them well. Add and heat ghee in a small Tadka pan. Temper with chopped green chilli pieces and cumin seeds. Pour them into the prepared Amrood almond curd mixture/salad. Mix well. Serve the nutritious Amrood almonds Koshimbir on your fasting day.
(G) International Almond Recipes
- Wheat Almond Biscotti
Ingredients
1 cup Whole wheat atta (flour)
1/2 tsp Baking powder
3/4 cup Milk solids remaining after you prepare ghee
1/2 cup Organic jaggery powder
1/4 tsp Cardamom powder
8–10 finely chopped almonds
1/4 cup Milk or less to bind the dough
Preheat oven to 170 °c for 10 minutes
Butter paper lined baking tray
Cooking Directions
First, collect all the ingredients. Now, sieve the baking powder and the flour. Add jaggery and milk solids and mix them with a spatula till creamy. Next, add almonds, cardamom powder, and sieved flour mixture. Continue mixing and rubbing with a spatula until you have a breadcrumb-like texture.
Now pour milk and bind to a rough dough. Roll it into a cylindrical shape and wrap it into cling film, twisting the ends. Refrigerate it for 60 minutes. Cut it into round shapes. Preheat the oven and arrange the Biscotti on the tray. Press a piece of almond on the top of each one.
Bake the tray for 10 minutes. Now remove the tray and press the biscotti well with a flat spoon. Bake again for 10 minutes. Remove the tray, allow it to cool, and enjoy. Your Wheat almond Biscotti will be loved by all!

1/3 part milk compound
1/2 cup almond coarsely ground
4 spoon milk maid
