Here’s the recipe for a cake I made through experimentation, but ended up being edible. I made it twice, so you can trust me 😁

To make sure I don’t end up becoming those baking bloggers that write more words than an actual recipe (which you have to scroll for a half a mile through before actually getting to the recipe), I’ll add the recipe first and do the talking below. Enjoy!

The Ingredients:

225g Butter, cubed and softened

205g Sugar

4 large eggs (free-range for brownie points)

225g Self-raising flour

9 Cookies and cream cookies (Oreo or similar)

150g/Around 9 medium strawberries, cut up (optional and you can use less or a bit more)

The Equipment:

I like to use the least amount of equipment, so I have less to wash, so this is the bare minimum:

A knife to cut the butter and strawberries

A large mixing bowl and spoon (or stand mixer)

A weighing scale to weigh the ingredients

A smaller bowl to do the weighing

A baking tray which can be square or a cake tin- whichever you like/have

Baking paper is useful to line the tray in but not essential

A blender to blitz the cookies- or you can bash them with a rolling pin in a bag or crush with a pestle and mortar- anything to get them crumbly and thin (I show you below how it should look)

Oven

The Method:

  1. Preheat your oven to gas mark 4 (which is 180 Celsius or 350 Fahrenheit)
  2. Mix the butter and sugar together until they look like this:

Top tip: if your butter is not soft, fret not, cube it up and pop the bowl (oven-proof) into the oven for a few seconds (careful not to melt the butter) and it’ll soften up nicely.

  1. Add in your 4 eggs. Wash your hands after handling the eggs. Mix well, creating bubbles for a more airy cake:

  1. Add in your flour now, carefully mix to make sure you don’t end up having more flour out of the bowl than in it. Don’t over-mix; this will toughen up the batter. Once done, it should look something like this:

  1. Blitz your cookies (the whole thing with the cream filling) until they are a fine crumb, like so:

  1. Stir the cookie crumbs in gently, ensuring they are evenly distributed:

  1. Cut the strawberries up thinly, if you are using (I highly recommend that you do, though):

  1. Add that into the batter evenly:

  1. Now your batter is ready!

Pop it into a baking tin and into the oven for around 30 minutes. However, your cooking time may vary and probably will be less because my oven is a bit slow (I cooked this for at least 45 minutes). You’ll know it’s done once the cake is firm, has a spring when you press it down (careful, it’s hot) and a knife inserted into the cake comes out with little to no crumbs- a few crumbs are fine- as the cake will cook a little after it’s out of the oven.

Keep checking on your cake after around 25 minutes, though, try to prevent opening the door unless you need to. Once it’s risen and the top has formed, you can check to see how it’s going.

Once cooled, you can tuck in.

Of course, I forgot to actually take a photo of the cake once it was cooked, but I got a picture of a slice, so you can see how the cake will look and not worry about it looking an odd colour:

The Nattering:

Could you tell that this was my first recipe here? I probably missed something, so just ask!

I was thinking I could make some icing for it next time- mixing up some cream cheese, icing sugar and crushed cookies but we’ll see. Baking is a science, so feel free to (carefully) experiment.

I figured making this out by going off a standard cake, which is 225g of butter, sugar and self-raising flour with 4 eggs- the first 4 steps of this recipe will give you a plain cake. In this recipe, I dropped 20g of sugar, as the cookies have enough sugar as it is.

I was initially going to make a white chocolate and strawberry cake, which is just me adding white chocolate chunks instead of the cookies into the mix, but upon seeing the cookies staring at me from the baking drawer, I thought to use them and ditch the chocolate.

I was unsure if the cookies would be okay or if they would burn in the cake, so I did a quick search online to see if anyone else did this and they did, so I thought it would be okay.

I didn’t follow those recipes, though, as they wanted me to have a range of other ingredients, and honestly, recipes that don’t use the metric system don’t go well with me. A cup of sugar is heavier than a cup of flour, no? And how do I ensure all the butter fits the cup? Anyway.

If you are looking for some trusty baking sites, I most often use BBC Good Food and Tesco Recipes. The latter is a bit random, but I’d consider these two to be foolproof sites.

My top tip is to read Ayat al-Kursi and say Bismillah before baking and putting lots of love into your bakes.

Also, here’s a super summarised recipe because I like writing the recipes down from websites, as opposed to having a device with me as I bake but don’t want to write everything down, so here is this for you:

  5. Cut strawberries, add
  6. Bake
